Windmühlenmesser Bird's Beak Paring Knife

I rarely see bird's beak knives in people's kitchens, and I'm here to tell you that if you had one, you'd use it more often than your paring knife. Bird's beak knives are great for de-stemming, removing seeds, digging out recalcitrant peach pits and potato eyes, and small peeling tasks. Don't tell any knife connoisseurs that I do this but I also use this knife to poke holes in and peel of package seals.
