I cooked on a Lacanche for a couple years when I lived in France, and it’s a fantastic range. The brass knobs patina with age. The styling of the classic has a heritage feel without laying it on thick. I appreciate that they have just two lines, Classic and Moderne. While they offer a range of colors and finishes, they’re not trying to be everything to everyone. I particularly like this Classic Savingy & Saulieu with a traditional French plate. One meaningful drawback is that the ranges come in unconventional sizes (39 3/8-inch and 43 1/2-inch, for instance), which could make replacing them challenging without renovating your entire kitchen. But if you’re spending $8-$30k on a range, maybe renovating your kitchen at a later date to accommodate a different range isn’t an issue.
